I have just made some Mince Pies: the pastry was a bit of an experiment because it was a shortbread type. The filling also included chopped fruit. They were delicious, alongside plenty of cream...Farwa wrote:Baking is fun though, Moonraker - I suggest you try it - you might enjoy it!

Ooooooh, shortbread pastry... even better if you grate a little orange rind into it.

It was a nuisance. An adventure was one thing - but an adventure without anything to eat was quite another thing. That wouldn't do at all. (The Valley of Adventure)

Daisy wrote:My mother did that too, and I have done likewise. It does make the mincemeat a bit less solid and much easier to spread - especially if you're making a large pie rather than individual ones.burlingtonbertram wrote:
My Grandma used to mix her mincemeat with stewed apple to eke it out a bit. I think I might give that a try this weekend; get the best of all worlds then.
Well, I stewed a bit of apple with sugar, a cinnamon stick and some cloves, and added it (cool) to the mincemeat. It taste very nice but different from the normal mince-pies. I won't say they are my best mince-pies of 2014 but I am fairly pleased with them.
I tried adding zest to the pastry but I think as I was bit too cautious, as I could hardly taste any difference.

You shouldn't really buy shop made mince pies. It's much better to make your own.
Fortunately there is a guide to show you how.
Tasty......Oh and the pies are ok too!

I like the ones from Costco, they have a layer of sponge on top of the mincemeat
For non shop bought ones it would have to be my Mother In Laws every time. She used to be a cook before she retired and boy can you tell!!!!
